Cheesecake Ice Cream Sundae Recipe

What could possibly be better than an ice cream sundae? An ice cream sundae with cheesecake! In this recipe, slices of rich cheesecake are topped with ice cream, chocolate sauce, and whipped cream to make these two decadent desserts even richer! Feel free to substitute any type of cheesecake that you want for the mini cheesecake recipe listed here.

Cheesecake Ice Cream Sundaes

Cheesecake recipe adapted from Kraft

Ingredients:

For the cheesecake:

1 cup chocolate graham cracker crumbs

¾ cup plus 2 tablespoons granulated sugar

3 tablespoons unsalted butter

24 ounces of cream cheese, softened

1 teaspoon vanilla extract

3 large eggs

For the sundaes:

Cheesecake of choice (or use the provided recipe)

Ice cream flavor of choice

Dessert sauce of choice, such as chocolate sauce

Whipped cream

Candy pieces or sprinkles

Nuts

Maraschino cherries

Instructions:

To make the mini-cheesecakes:

Preheat the oven to 325 Degrees Fahrenheit. Line 18 muffin tins with paper muffin-cups.

Melt the butter in a small saucepan. Mix the graham cracker crumbs, 2 tablespoons of the sugar, and butter in a small bowl and press some of the mixture into the bottom of each of the paper muffin cups.

In a medium mixing bowl, combine the cream cheese, vanilla, and 2 cups of the sugar and beat on medium speed until smooth. Set the mixer on low and beat in the eggs one at a time until the mixture is well combined. Spoon the mixture evenly over the crust in each of the paper-lined muffin cups.

Place in the center of the preheated oven and bake for 25-30 minutes until the edges of the cheesecakes are completely set and the center is still a little soft. Let cool on the countertop for about 15 minutes, and then refrigerate for about an hour.

To make sundaes:

Unpeel the cooled cheesecake from the muffin papers. Place the cheesecake in the center of a dessert dish.

Top with several scoops of your desired flavor of ice cream. Ladle dessert sauce of choice over the ice cream. Sprinkle on desired toppings, such as nuts, fruit, and candy pieces over the ice cream. Top with whipped cream and finish it off with a maraschino cherry.
